Mediterranean-style stuffed peppers

Ingredients
- 1 tbsp. sundried tomato oil (oil from the sundried tomato can)
- 2 French shallots, chopped
- 2 cloves garlic, chopped
- 1 cup white mushrooms, finely chopped
- 1 cup courgette, finely chopped
- 15 black olives, cut in 3
- 6 sun-dried tomatoes, chopped
- 1 1/2 cups spinach, chopped
- 1/2 cup cooked rice
- Half a 340g pack of Original ground tempeh
- 3 tbsp. baking powder
- 2 tbsp. tomato paste
- 2 tsp. maple syrup
- 1 tsp. Italian seasoning
- Salt and black pepper to taste
- 3 large peppers, halved and seeded
- Grated vegetable cheese
- Fresh herbs, for garnish (optional)
