Mediterranean-style stuffed peppers

PREPARATION :

Chop the vegetables. Heat a large, deep pan over medium-high heat and add all the chopped vegetables. Sauté for 2 minutes. Then add the rest of the ingredients, from cooked rice to salt and black pepper. Stir and remove the pan from the heat.

Cut 3 peppers in half and remove the seeds. Stuff the peppers with the mixture. Preheat the oven to 400°F (200°C) and place parchment paper over a baking sheet. Place peppers on the baking sheet.
Top with grated vegetable cheese. Bake for 30 minutes. Remove from the oven and let cool for 10 minutes before serving.
