Tempeh and Vegetable Parcels


Preheat the BBQ to medium-high heat. In a bowl, mix all the ingredients except the crumbled tempeh.

Cut 4 sheets of aluminum foil large enough to create parcels.
Place a quarter of the vegetable mixture on each foil.
Season with salt, pepper, and drizzle with olive oil.
Seal the parcels tightly and place them on the BBQ grill for 15 minutes.
Add the crumbled Tempeh to each parcel and cook for an additional 5 minutes.

Refrigerate: Up to 5 days
Freeze: 3 months
