Tempeh Mac and cheese

In a large non-stick pan, heat the olive oil over medium-high heat and grill the tempeh on all sides for 2 minutes.

Remove from the pan and keep warm.

In the same pant, add all the other ingredients. Be careful, if your pan tends to stick, add the cheese only 2 minutes before the end of the cooking time.

Cook over medium-high heat, stirring often, for 13 minutes or until al dente. Add salt and pepper to taste.

Add the grilled tempeh and serve.
