Preheat the oven to 375°F.

Place the tempeh in a food processor and chop finely.

In a pot over medium heat, warm the tempeh, brown sugar, peanut butter, coconut oil and vanilla for 2 minutes.

Pour into a bowl and add all the remaining ingredients.

Using a portion scoop, drop the mixture onto a baking sheet lined with parchment paper. Flatten lightly with a fork.

Bake for 15 to 20 minutes, until lightly golden.
