Tempeh Creton

In a food processor, finely chop the tempeh.

In a saucepan over medium-high heat, soften the onion and garlic in the oil. Turn the heat down to low, add the tempeh and the rest of the ingredients and cook 2 minutes more.

Transfer to a blender and blend until perfectly smooth.

Adjust the texture by adding breadcrumbs if the mixture looks too loose, or vegetable broth if it looks too thick.

Press into a dish and refrigerate at least 6 hours before serving.

Serve on a slice of country loaf.
