Tempeh Chocolate Fruit Granola Bars

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine oats, puffed rice, dates, cranberries, and mashed banana. Set aside.
  3. In a food processor, finely chop the tempeh. Set aside.
  4. In a small saucepan over medium heat, warm the maple syrup, sunflower oil, and tempeh for about 2 minutes, stirring constantly.
  5. Pour the mixture over the dry ingredients and mix well.
  6. Add chocolate chips and mix again.
  7. Press the mixture firmly into a parchment-lined rectangular baking pan.
  8. Bake for 15 to 20 minutes, until lightly golden.
  9. Let cool completely before removing from the pan and cutting into bars.
