Potato skins with tempeh stuffing

Preheat the oven to 400° F.

Cut the potatoes in half lengthwise and brush them with the olive oil.

Season with salt and pepper.

Place the potatoes on a baking sheet lined with parchment paper, flesh side down.

Bake for 30 minutes or until the core of the potatoes is tender.

Spoon out ¾ of the flesh and set aside for a future recipe.

In a large bowl, mix all the other ingredients and top the potatoes with the mixture.

Place in the oven and bake for 10 minutes.
